1 6-ounce package
semisweet chocolate morsels *
1 8-ounce package cream cheese, softened
1 teaspoon vanilla extract
1 pound confectioners' sugar
2 cups finely chopped pecans
In a large saucepan
over low heat, stirring constantly,
melt chocolate morsels. Remove from heat.
Blend in cream cheese and vanilla.
Add confectioners' sugar in small amounts,
working in until blended. Chill overnight.
Cut a piece of waxed paper 18-inches long.
Place half the candy on prepared waxed paper;
roll into a log about 1-1/2 inches in diameter.
Unwrap; roll the log in pecans.
Repeat with remaining half of candy. Chill until firm.
Slice into 1/2-thick rounds; store in
refrigerator. Butterscotch morsels or peanut butter morsels can be
substituted for chocolate morsels.
