Crunchy Cashew Brittle

2 cups sugar
1 cup light corn syrup
1 cup butter or margarine
1/2 cup water
3 cups chopped cashews
1-1/2 teaspoons baking soda

Grease 2 large baking sheets with butter.
In a large saucepan, combine sugar, corn syrup, butter, and water; bring to a boil, stirring constantly to dissolve sugar.  Cook, stirring constantly, until mixture reaches soft crack stage.  Stir in cashews and continue cooking, 
stirring frequently, to hard crack stage.  
Remove from heat; quickly stir baking soda into the mixture.  Pour onto prepared baking sheets.  
Cool completely.  
Break into pieces and store tightly covered.
Little kids love this candy.
